Macadamia Nut "Ricotta"

Macadamia Nut "Ricotta"
Makes 1 1/2 cups
From Nom Nom Paleo

1 c. raw macadamia nuts
1 tsp. salt
Juice from 1 medium lemon
1/2 c. water

Puree all ingredients in a food processor until smooth.

Store in an airtight container in the fridge - will keep for up to a week.

Notes: We haven't tried this yet.
