Candied Carrots
Servings: 2 or 3
Ingredients:
8 large carrots, cut into 1/2-inch thick rounds
4 dates, pitted and chopped
2 Tbsp. ghee, melted
Salt and pepper
Instructions:
Preheat oven to 375 degrees.
Put the carrots and dates in a baking dish, and top with melted ghee. Season with salt and pepper, and toss to coat.
Bake for 20 to 30 minutes, or until the carrots are fork-tender.
Notes: We haven't tried this yet.
